Ingredients For Soupy Noodles
4 cups of noodles (preferably rice)
2 chicken breasts (optional)
4 tbsp ginger-garlic paste
½ tbsp. turmeric powder
5-7 Basil leaves
1 tsp cumin seeds
2 cans of coconut milk (for 5 servings)
I tbsp lime
For the toppings
4 cloves garlic and 2 onions (fried to golden brown)
Cilantro for garnish
¼ cup oil
Cut chicken breasts/capsicum for vegetarians into dices. Add ginger-garlic paste to it. Sprinkle salt and turmeric for coating the mixture and keep it aside. Boil the eggs. Also, boil the noodles by adding 1 tbsp oil to it. In a skillet, fry garlic and onions till they become brown, and keep it aside. In the same oil, add cumin seeds, chili peppers, and basil leaves. To it, add the chicken or capsicum along with salt. Cook it for 2-3 minutes and pour in the coconut milk and stir it occasionally. Squeeze the lemon juice. After 10 minutes, add the boiled noodles. Add the toppings. Enjoy the soupy noodles with slurps.
Vegetable Hakka Noodles
Hakka noodles are very easy to prepare and are savored by Indians. Although India is no land of noodles, people of all age groups enjoy it.
½ cup each of chopped beans, carrot, mushrooms, beans, spring onions, garlic chives, bell peppers( red, yellow, green)
1 tbsp ginger-garlic paste
2-3 slit cut chilies
1 tbsp soy sauce (optional)
4 cups of wheat noodles semi boiled(4 servings)
3 tbsp oil (for frying)
Crush black pepper (accordingly)
Semi-boil the noodles with one teaspoon oil and keep it aside. Add oil to the skillet. Then, add chilies to it. Now add the ginger-garlic paste to the skillet. Add all the chopped vegetables after 2 minutes. Add salt and crushed black pepper to the veggies. Finally, add soy sauce and stir fry for 3-4 minutes. To it, add the semi-boiled noodles and stir for another minute. Enjoy the spicy noodles full of healthy vegetables.
