Make Your Own Cucumber Salad

Cucumber Salad is an authentic Asian salad. It originated in China, Japan, and Korea. It combines cucumber with various herbs and spices for the classic Asian taste. I was introduced to this salad by my friend Karen who lives in Japan.

This salad is so delicious and goes great with fish or meat. The traditional recipe uses scented vinegar and sugar. Cucumber Salad has thinly sliced cucumbers, white onions, and toss in a lightly sweet, slightly bitter vinegar dressing. The vinegar dressing can be a rich vinaigrette or a simple soy sauce.

Using Japanese Rice Wine Vinegar

In our recipe, we used Japanese rice wine vinegar. I tasted a slightly dry one, but it enhances the flavor of the cucumbers. Traditional cucumber salad recipe calls for half a medium-sized cucumber washed, cut into 2-inch segments, and then roasted in the hot, dry oven until crisp.

After roasting, finely chop the cucumbers and place them in a bowl with a bit of oil—mix two teaspoons of sake or dry red wine vinegar with enough water to cover the cucumbers. Allow standing for five minutes. Once they are soft, remove them from the oven and serve with a garnish of sliced white onions along with your favorite Japanese dipping sauce.

For an additional flavorful twist, we like to add slices of red pepper and a thin slice of lime to the mix. To make the red pepper sauce, we use mayonnaise. Place all of the cucumber salad ingredients in a large bowl and stir until combined. Then take a small bowl and pour in the rice wine vinegar mixture and mix thoroughly.

When serving, slice the cucumber salad up into small pieces. Serve individual cucumber slices with your favorite dip. You can also sprinkle sesame seeds or black pepper on top for a nice kick.

To make sure your Asian cucumber salad tastes great, you need to garnish it well. We love to garnish with sliced scallions. Combine the sliced scallions with a bit of white wine vinegar and honey to taste. If you want to be a little fancier, you can find a bottle of rice wine, vinegar, and honey online. Mix the two and pour over the cucumber salad to soak in the vinegar.

To make this salad a complete dish, start with a small bowl of mixed vegetables. In this case, we recommend thinly sliced cucumbers, red bell pepper, cilantro, mint, and green onions. You can also add baby carrots and spinach to the mix if you would like a richer flavor. If you serve this salad with toasted sesame oil and a thin layer of sea salt, you will add a spicy kick to this simple Asian recipe.

Start Cooking

Now, it is time to start cooking. Place a small bowl of low sodium chicken broth into the small bowl of your vegetable mixture. Add a layer of thinly sliced red bell pepper, green onions, and cucumber. Stir this mixture until the ingredients are completely coated in the broth. Allow this mixture to reduce slightly.

Now, it is time to add the cucumber slices to this mixture. Place a medium layer of uncooked rice in the bottom of your small bowel. Over this, you will place the thinly sliced red onion. Then, you will lightly sprinkle you’re sea salt all over the salad and serve.

The final step is to serve. Now, you will want to add the uncooked rice to your small bowl and pour in one-half cup of your rice wine vinegar. Next, you will add in one teaspoon of your sesame seeds. Also, you will lightly sprinkle this mixture over your freshly sliced red onion. Serve this delicious Asian salad to your family and friends.

You will not be disappointed by how good this salad is! The thinly sliced cucumber, the chopped red pepper, and the toasted sesame seeds are a great combination.
